Have great breakfasts without spending much time in the mornings prepping. These wonderful breakfast tacos use soy chorizo from Trader Joe’s, eggs, chopped yellow onions, chopped tomatoes and cilantro. Serve over some nice corn tortillas and top with Greek yogurt (nice healthy alternative to sour cream).
Make a good amount and refrigerate for your work week. When you’re ready for them, just heat up your tortillas and microwave the filling. Add avocados or different toppings so you don’t get bored!
